1 watermelon

Light Simple Sryup (recipe follows)


To make the Light Simple Syrup: Dissolve 1 c. honey or sugar in 2 c. boiling water. Stir untill well combined. Allow to cool. Store unused portion in a glass jar in the fridge. (For a thicker syrup, you can use 1 part sugar to 1 part water.)


Cut watermelon from the rind, and cut it into chunks. Place chunks (with seeds) in the food processor. Pulse several times, in very short bursts (keeping seeds intact), until the watermelon liquifies. Strain through a colander into a bowl, to remove seeds. Repeat if needed to liquify the entire watermelon.

Mix the watermelon juice with the syrup to sweeten to taste. Pour into popsicle molds and freeze.
