Fresh Raspberry or Strawberry Coffeecake

  • 1/2 cup Water
  • 2 cups Fresh raspberries or strawberries
  • 1 tablespoon Lemon juice
  • 1/2 cup sugar
  • 3 tablespoons Cornstarch
  • 1 1/2 cups Flour
  • 1/2 cup Sugar
  • 1 1/2 tsp. Baking powder
  • 1/2 tsp. Cinnamon
  • 1/8 tsp. Mace
  • 1/4 tsp. Salt
  • 1/2 cup Margarine
  • 1 egg Beaten
  • 1/2 cup Milk
  • 1/2 tsp. Vanilla

Combine berries and water, cover and simmer for 5 minutes.  Stir in lemon juice.  Mix 1/2 cup sugar and cornstarch.  Stir into fruit with wire whisk - put aside.

In a mixing bowl, add flour, sugar, baking powder, cinnamon, mace and salt.  Cut margarine into dry ingredients.  Combine egg, milk and vanilla.  Mix into dry mixture.  Spread half of this mixture into a greased 9x9 pan.  Spread cooked fruit over batter, spread rest of the batter on top.

Topping

1/4 cup sugar, 1/4 cup flour, 2 tblsp. butter, 1/4 cup chopped walnuts.  Cut margarine into sugar and bake at 350° oven for 40-45 minutes.
