Cucumber Salsa

2 medium to large cucumbers peeled and diced or shredded

1 cup of finely diced tomatoes

½ cup of minced scallions or red onion

1 clove of garlic finely minced

¼ cup of any color sweet pepper finely diced

¼ cup of lime juice

3 tablespoons of virgin olive oil or canola oil

2 tablespoons minced fresh cilantro

¼ teaspoon salt

1 finely minced jalapeno or serrano pepper. Remove seeds for less heat or reduce the amount.

Combine all the ingredients in a bowl and toss to coat. Chill and serve with tortilla chips or as a salad side.
